Grilled NY Strips with Italian Butter

Serves 4

  • 4 New Your Strip steaks
  • Olive oil cooking spray
  • Private Selection® Steakhouse Seasoning Grinder
  • 8 oz. Plugra® unsalted butter (at room temperature)
  • 1 Teaspoon Gourmet Garden® squeeze garlic
  • 1 Tablespoon Gourmet Garden® squeeze Italian Blend

Grilled Potato Packets

  • 2 Large baking potatoes, peeled and sliced ¼ inch
  • Plugra® unsalted butter (cold from the refrigerator)
  • ½ Cup onion, diced small
  • Salt and pepper to taste
  • Aluminum foil

Grilled Asparagus (optional)

  • 20 Asparagus spears
  • Olive oil cooking spray
  • Salt and pepper to taste

Directions

  1. Make the Italian "Compound" butter by placing the softened butter into a medium size bowl and adding the squeeze garlic and Italian squeeze herbs. Mix well and place in a zippy bag; forcing down to the closed end to form a roll. Roll up the bag and place in the refrigerator for 30 minutes. Can be made days ahead.
  2. Spray a 16 inch piece of aluminum foil with cooking spray and place the potato slices at one end of the foil; leaving a 2 inch border at top and sides. Place a small ¼ inch square piece of butter on each potato slice. Sprinkle the onions over the slices and season to taste with the salt and pepper. Fold the other half of the foil over to cover and close tight by folding over the edges. Place on a pre-heated 450 degree grill for 20 minutes; turning every 5 minutes.
  3. Spray both sides of the steaks with the cooking spray and season to taste with the seasoning grinder. Place on the hottest section of your grill for 3 minutes per side to create grill marks. Move the steaks to a medium heat section of the grill and continue to cook; turning every minute until done to your preference. Transfer the steaks to the serving plates and cover with foil to keep warm.
  4. Toss the asparagus with the cooking spray and salt and pepper and place on a very hot section of the grill. Roll 1/3rd of a turn event 3 minutes. Place on serving plates with the cooked potatoes and serve.
